Full description
Most bánh mì cooking classes in Hanoi use store-bought fillings. Here, the chả lụa on your chopping board was made from scratch in our kitchen — ground pork, family seasoning, banana leaf, steamed the traditional way — before you arrived.
At our family-run restaurant in Hanoi, you’ll slice that homemade pork roll yourself, thin and even, and layer it into a bánh mì you’ve built from the ground up. The bread starts as raw dough in your hands: you knead it, shape it, and bake it until it has the thin crust and airy crumb that defines a proper Vietnamese baguette. You also pickle the carrots and daikon fresh, mix the sauces, and assemble every layer yourself. Nothing comes from a packet.
The second half of class is devoted to Vietnamese coffee. Hanoi has its own brewing culture, and you’ll choose one style to master: the rich whipped-yolk egg coffee invented here in the 1940s, smooth coconut coffee, or the unexpectedly complex salted coffee. Your host walks you through the technique and the story behind it as you brew.
When everything is ready, you sit down at our restaurant table to eat what you made — warm bread, house-made chả lụa, freshly brewed coffee.
What makes this different
The chả lụa is made in-house from our own family recipe — not purchased, not store-made. Guests slice it themselves and build their bánh mì layer by layer. The full experience takes place at our own restaurant in Hanoi.
